Ingredients
1. Mix all ingredients except for bread crumbs and olive oil, making sure to not break down halibut, leaving it in larger flakes. 2. Split mixture into 4 even balls. 3. Press balls into bread crumbs coating both sides and flattening to a 2 inch pattie. 4. Place olive oil into a pre-heated saute pan on medium heat and cook patties to a golden brown. Suggested Wine: Young fruity dry white wines. Serving Ideas: Serve atop steamed spinach or braised kale. NOTES: Halibut and Shrimp are already cooked so all you have to do is cook pattie until the internal temp. reaches 165 degrees. Serve with your favourite seafood sauce e.g. tartar sauce, cocktail sauce, red onion and pimento vinaigrette, honey mustard or even an oriental plum sauce. Chef John Back to recipes page |
