ROYAL BLUE OYSTERS VICTORIA

Here's a weird one for the
barbecue. If you like oysters and blue cheese, you'll love this one. This
recipe works as an appetizer or an entree.
- 1 tablespoon mayonnaise per oyster
- 1 tablespoon of breadcrumb and parmesan cheese mixture per oyster
- chopped fresh herbs, oregano, thyme, fennel leaves
- coarse black pepper
- olive oil
- grated or crumbled blue cheese
The nice thing about this recipe is that it is fast to make and
quick to cook.
- Shuck your oysters, keeping the deep half of the shell, and place
the oyster in it.
- Mix mayonnaise, chopped herbs, and coarse pepper in bowl, then
spread 1 tablespoon of it on oysters.
- Sprinkle blue cheese on oysters.
- Next, sprinkle the parmesan and bread crumbs on oysters.
- Drizzle olive oil on each oyster.
- Place oysters into hot barbecue and close lid.
Cooking time depends on how you like your oysters. For me, the rarer
the better. Total cooking time should not exceed 8 minutes in a hot
barbecue, if you like them medium to medium-well. If you can get fresh
swimming scallops this recipe can be used for them as well.
