Recipe
for 4 people
- 3-
squid tubes per person
- 2
bunches of spinach steamed and drained
- 1
ounce goat cheese
- 1
ounce pine nuts
- 1
leaf fresh basil
- 1
small egg
- bread
crumbs to thicken
- salt
and coarse pepper to taste
Production:
- Put
all ingredients into food processor except squid tubes
- Add
bread crumbs then coarse chop. at this point check the consistency.
- You
want the filling to look like thick porridge. if it's to thin just
- Add
bread crumbs till it get to desired thickness. stuff squid tubes
- With
this then use a bamboo skewer to skewer the top of the tube closed.
- Depending
on the size of the skewer you can usually get 4 to 5 tubes
- Per
skewer. put your favorite tomato sauce into a large pot
- Heat
to
a slow simmer. place the tubes into pot making sure they are covered
by sauce.

Cook for 30 to 40 minutes covered.
